Coconut Coffee

There is always something so inviting and calming about waking up and grabbing a cup of coffee. Simply the ritual of sipping on a cup of joe while the world is still calm will get me out of bed. But being someone that wakes up pretty hungry, I like my coffee to be a bit more satiating than a simple brew. So, insert this coconut coffee, a spin on the bulletproof coffee, but with a slightly coconutty taste and lighter feel. Unlike regular lattes that are filling but leave me feeling bloated, this coconut coffee keeps me feeling energized until the late morning without the sluggish feeling of drinking copious dairy. Coconut Coffee

1 serving, vegan, paleo, dairy-free

Ingredients:

  • 8 oz Freshly Brewed Hot Coffee
  • 1 tsp (or more for taste) Maple Syrup
  • 1/4 cup Full Fat Coconut Milk
  • Optional: 1/8 tsp of vanilla extract or dash of cinnamon

Directions:

Add all ingredients into a blender, then pour into a mug and serve immediately. Enjoy!
