Pumpkin Spice Oats

In my pharmacology course, my professor emphasized how any foreign chemical that causes a physiologic effect is considered a drug, and for that reason food is classified as a drug. We usually don’t take as much precaution with our food like we do with medications we take, but what if we did?
Food is one of the only continuous intakes we have in our life, which adds up pretty fast. Everyday we can decide what food we put into our body and have the option to better our health. To me, that is completely empowering! Especially when I create a simple, nutritious, and dreamy meal. If you’re on my same wavelength or are aspiring to cook more nourishing meals, these quick CREAMY PUMPKIN SPICE OATS for breakfast are a perfect way to do so. Promise. The spices alone will warm you up and leave you feeling at ease, especially knowing you’ve already done your body good before starting your daily hustle.
- ½ can pumpkin purée
- 1 cup unsweetened almond milk
- ¾ cup gluten-free (or regular) oats (can add more of you like thicker oatmeal)
- 1 tbsp ground flax seed
- 1 tbsp honey or maple syrup
- 1 tsp pumpkin spice
- ¼ tsp cinnamon
- Nut butter to top
- Pecans (or walnuts) to top
Mix all ingredients in a sauce pan, heat over medium heat until simmering. Turn down heat and whisk occasionally until desired consistency. Top with nut butter (I used tj’s mixed nut butter-so good!) and pecans. Eat immediately or store in a tightly sealed container for up to five days in the refrigerator and heat up when ready to dig in!
