I wish I could say I invented this magical breakfast combination but sadly thats just not the case! Whoever did invent it, is a GENIUS and must be a major foodie because it’s dreamy. When you live in WA, which is considered the apple state, you best believe I’m consuming an apple a day – and somehow after 24 years, I’m still not sick of them! My fiancé put this Stewed Cinnamon Apples over Nut Butter Toast situation this way, it’s basically eating apple pie for breakfast but ready in under 10 minutes. Some words of wisdom if I do say so myself.
Stewed Cinnamon Apples over Nut Butter Toast
2 servings, vegan. vegetarian, gluten-free option
- 2 apples, chopped into cubes with skin on
- 1 tsp butter (grass-fed if possible)
- 1 tsp cinnamon
- Nut butter (almond butter, peanut butter, etc.)
- 2-3 pieces of bread, toasted (use gluten-free bread if needed)
Heat the butter in a pan and add the apple pieces and cinnamon. Mix and let simmer down for a few minutes until the apples soften and slightly caramelize. Meanwhile toast your bread slices and top with nut butter (about 1-2 tbsp per slice). Remove the apples from the heat and pile the stewed apples on top of each toast. Enjoy!
