Chewy Peanut Butter Protein Bites

Peanut butter has a special place in my kitchen. I didn’t grow up eating peanut butter in my family’s household (Europeans are missing out big time), so I feel like I’m making up for lost time – aka taking spoonfuls of nut butter to the mouth. No shame. But I thought I’d make something a little more socially acceptably to snack on that still makes peanut butter the star of each bite. AND these are the best little nuggets to take on the go to fuel your adventure. These have been a game-changer when I go skiing, I just pop one in my mouth as I’m riding up the chairlift and all is well for a balanced blood sugar.

Last thing: These bites get a natural dose of plant-based protein and fiber by adding chickpea flour into the mix! I know, it may sound odd, but this flour is making its way into major grocery stores (Bobs Red Mill is a common brand seen in stores). Chickpea flour (also known as garbanzo bean flour) is so versatile, packs in great health-benefits, and is much more affordable than alternative flours like almond flour. Keep an eye out for chickpea flour at your local grocery store, it is likely hidden in the natural food section.

Chewy Peanut Butter Protein Bites

(Makes 6-8 bites, gluten-free, paleo, vegetarian, plant-based)

Ingredients:

  • 1/4 cup chickpea flour
  • 2 Tbsp coconut flour
  • 1/2 tsp cinnamon
  • pinch of salt (omit if your peanut butter is salted)
  • 1/3 cup creamy (or chunky) peanut butter
  • 1 Tbsp coconut oil, melted
  • 1 Tbsp honey
  • 2 Tbsp dried cranberries
  • optional: 1 Tbsp cacao nibs (sub chocolate chips)

Directions:

Mix the the chickpea flour, coconut flour, cinnamon, and salt (if using) together. Next add in all remaining ingredients and mix well. I usually start mixing with the back of a fork and then use my hands to create a dough. Using your hands, break away about 1 Tbsp heaps of dough and roll into balls between your palms. Place in an airtight container and refrigerate for an hour before eating. These bites store best in the fridge for up to a week!
