When the Seattle sun came back from its winter retreat, I was feeling all the spring and summer feels (mind you, I was still decked out in sweaters). But no harm in pretending warmer days are just around the corner, right? With that, came along this Ginger Pineapple Colada, which was inspired from a health shot I tried at Facebook Seattle – It was a potent little shot of ginger and some pineapple juice. Delicious and refreshing is all I remember! I figured this combo would be perfect in a less potent, slightly creamy, and refreshing smoothie. This smoothie has been a total hit with my family, even for those that don’t love the taste of ginger (like myself). Ginger has amazing healing properties for inflammation and gut discomfort, so adding some in your diet is an added plus. I’d love to hear how you like this combo!
Ginger Pineapple Colada
(1 serving (or 2 small), vegan, vegetarian, gluten-free, dairy-free, paleo)
- 1.5 cups frozen pineapple chunks
- 2 inches of fresh ginger, peeled
- 1 cup almond milk (or milk of choice)
- 1 cup water
- optional: 1/4 cup frozen spinach
Add all ingredients into a blender and blend on high speed until smooth. Enjoy!
