Tropical Ginger Turmeric Smoothie

(Makes 1 large serving, or 2 smaller servings, gluten-free, paleo, dairy free, vegan option)

I wish I could say I came up with this ingredient combination to make this insanely delicious & tropical smoothie, but the glory goes to Prasad Cafe in Portland! We had what’s called the “GILT” smoothie as part of our breakfast when we visited Prasad Cafe a few months ago, and we were in awe of how thick, creamy, and perfectly the flavors blended. I usually don’t love carrot juice, but its addition here adds a subtle earthiness. The ginger and turmeric add a good kick while the pineapple and mango balance it all out by bringing in some sweetness! When I got home to my kitchen back in Seattle, I was determined to make the closest version I could of this dreamy smoothie. So here we are after multiple attempts, with a pretty darn close version to the real deal! This is perfect for all you who don’t live near Portland and want in on this goodness. And it can be made in under 5 minutes…so make sure to give this Tropical Ginger Turmeric Smoothie a go!

Tropical Ginger Turmeric Smoothie

(Makes 1 large serving, or 2 smaller servings, gluten-free, paleo, dairy free, vegan option)

  • 3/4 cup carrot juice
  • 1/4 cup almond or coconut milk
  • 3/4 cup pineapple
  • 3/4 cup mango
  • 3/4 tsp turmeric powder
  • 2 inches fresh ginger
  • Optional: Bee pollen to top (omit if vegan)

Add all ingredients into the blender, blend until smooth and serve immediately. Optionally, top with bee pollen to serve (not vegan).
