Blueberry Coconut Flour Pancakes

What’s the weekend without a special breakfast?! Set the mood of your weekend by whipping up something so delicious, filling, and filled with wholesome ingredients. Aka THESE Blueberry Coconut Flour Pancakes! I love a good pancake, but regular pancakes made from wheat flour have a tendency to put me in a food coma – which is not the mood I want to set for my weekend! By using coconut flour, these pancakes are absorbed much slower as coconut flour is filled with healthy fats and fiber to slow down the digestion. Feel free to omit the blueberries and make these into plain pancakes instead- both ways are absolutely delicious! These will certainly bring extra bliss to your well-deserved weekend.

Blueberry Coconut Flour Pancakes

(2 servings, gluten-free, paleo, refined-sugar free, vegetarian)

  • 5 Tbsp + 1 tsp coconut flour
  • 4 eggs
  • 2 Tbsp melted coconut oil or butter
  • 1 tablespoon coconut sugar
  • 1/4 tsp vanilla extract
  • 1/4 tsp baking powder
  • pinch of salt
  • Handful of blueberries

In a medium bowl, whisk the eggs, melted coconut oil (or butter), coconut sugar, and vanilla until well combined. Add in the coconut flour, baking powder, and salt and whisk until the batter is smooth. Heat a nonstick pan on medium heat, with a small dollop (~1/2 tsp) coconut oil (or butter) and coat the pan with the fat. I find it easiest to make smaller sized pancakes with this batter, so I add just under 1/4 cup of dough into the skillet for each pancake (I try to fit about 3 pancakes in per round on the pan). Add about 3-4 blueberries on top each pancake; once the pancakes are cooked around the edges (about 30sec-1min), flip with a spatula and cook the other side for about 20 seconds or until golden. Repeat with the remaining dough and dress your pancakes with your favorite toppings. A few of my favorites are peaches, extra blueberries, almond butter, peanut butter, maple syrup, etc.. Dig in!
