Cinnamon Sugar Cookie Dough Bites

Valentine’s day is here and you may be thinking – oh sh*t, you’re just happy you made it through the week. Life is busy and I think showing our love can be done in little meaningful ways. Whether it’s sending a heartfelt text or making a quick and delicious sweet treat that doesn’t even require baking, love is love.

I’m a sucker for holidays, mainly because I like to make days feel festive. There’s something about adding a festivity or treat to a regular day, that makes my week feel more special. Some people don’t care for this, which I can understand, but holidays resonate with me.

I wanted to make a recipe that is festive but also the quickest treat to whip up, mainly because Valentine’s day is on a Friday this year and life gets busy! But also, I wanted to make a treat that I foresee myself making long after February 14th is over. Like on a random Tuesday night when my sweet tooth is talking to me.

This recipe is made naturally gluten-free with oats (turned into oat flour) and coconut flour as the base. This combination of flours with coconut sugar, cinnamon, and almond butter, creates this harmony of simple but sweet flavors while having a slightly crunchy but soft texture. These flours also bring nutrition in the form of fiber (from the oats) and healthy fats (from the coconut flour) to make these little nuggets even more enticing to whip up!

The inspiration for these sugar cookie dough bites came from wanting to make a sweet treat that doesn’t require baking or frying, but sort of tastes like a churro. I initially wanted to call these no-bake churro bites, but my lovely, honest husband admitted they taste more like a cinnamon sugar cookie instead. So here we are with a Cinnamon Sugar Cookie Dough Bites recipe that we are both smitten for. You can enjoy this treat right away or place in the fridge to harden – either are so dang delicious! As for the chocolate coating – it is totally optional but makes these cookie dough bites feel so indulgently fun.

Cinnamon Sugar Cookie Dough Bites

(Makes 10 cookie dough bites, vegan, gluten-free, dairy-free option)


  • 1/2 cup almond butter (creamy or crunchy, and one without added oils)
  • 3 Tbsp melted coconut oil (can sub butter)
  • 1/2 cup rolled oats (sub pre-made oat flour)
  • 3/4 tsp cinnamon
  • 1/4 cup coconut flour
  • 1/4 cup coconut sugar
  • Optional chocolate coating: 1/2 cup chocolate chips of choice + 1 tsp of coconut oil or butter


Add the almond butter and melted coconut oil in a medium sized bowl and mix until smooth.

Place the oats in a high speed blender or food processor and pulse on high until a flour consistency is made. Add this oat flour mixture to the bowl with the almond butter mixture and add all remaining ingredients (except the chocolate coating ingredients!). Mix the dry ingredients into the wet using a spoon or your fingers. Mix until a dough consistency is made (you may need to get your hands in there to make it easier). Wash and dry your hands off to prevent sticking when rolling the cookie dough bites. Measure out one tablespoon of dough and roll between your palms to create a ball, then place on a plate or in a large tupperware. Repeat with the remaining dough. Either eat as they are or place in the fridge to harden slightly and get a smooth, yet crunchy texture.

If you’re dipping the cookie dough bites into chocolate, simply melt the chocolate chips with the coconut oil (or butter) in a microwave safe bowl in the microwave. Melt for about 1 minute, then stir and reassess if more heat is required. Dip the cookie dough bites into the chocolate while it is still smooth and soft, then either eat fresh or place back into the fridge to create a hardened chocolate coating. Enjoy with love!
